Ah Ah Ah Chewy


The ant mummy's sudden sneeze caused him to bang his head on the table and spill most of his coffee, "Ow!" The waiter casually dried off the application and refilled his cup. This wasn't the first Yucatan ant mummy to apply for a night baker position. If the chili powder dusted sparkly wrappings weren't enough of a giveaway, a distinctive sneeze when exposed to cornmeal made the Yucat-ants easy to recognize.

                     
 This recipe is a variation on the Chewy Oatmeal Cookie on the King Arthur Flour website.  Mostly fruit and nuts anyway the ground, baked, pumpkin seeds were all but lost in this chewy oatmeal cookie. Made with no butter, this cookie begins with 6 tablespoons of coconut oil combined with 2 tablespoons of buttermilk.

Beginning with the coconut oil, buttermilk, and vanilla extract the mixing is systematic. First get the coconut oil and buttermilk joined up, then the sugar smoothly mixed then the egg followed by the flour/pumpkin seed mix. That's as far as my mixer would go.









These cookies are loaded so heavy that they
don't slump much.Unless you want them
really thick, you have to mash em.
 I used a 1/2 tablespoon scoop and an inside
out baggie to shape and mash with.














At 2 minutes they were browning at the edges. They did remain just a little soft (that's a good thing). Mmmm.
